A word about “unwashed” coffees:  Note it’s not dirty but cultivated using a "natural" method. Instead of washing and removing the pulp off the seed right after picking, the cherries are left to dry completely before the seed is milled from the outer pulp and skin. This approach allows a prolonged contact between the ripe fruit and the seed which imparts a fruitier, more complex and wine-like coffee flavour.
